Overwhelmingly Delicious Chocolate Cookies

WOW. These chocolate cookies are overwhelmingly chocolate. They remind me of the chocolate density of chocolate flour-less cake meeting the flavor of fresh out of the oven melted brownies!

The dough is amazing, the baked version is amazing. If chocolate could kill – this would be my death by chocolate. Dear chocolate lovers, make this recipe the next time you want cookies – or chocolate (which for me is always).

Overwhelming Delicious Chocolate Cookies

Adapted from Divine Baking

Yield: About 18 (if you don’t eat all the dough first…)

  • 1 and 1/2 cups bittersweet chocolate chips (I mixed 60% cocoa chips with dark chocolate chips), divided
  • 3 large egg whites, room temperature
  • 2 1/2 cups powdered sugar, divided
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup Hershey’s Dark cocoa powder (or more unsweetened cocoa powder)
  • 1 Tbsp cornstarch
  • 1/4 tsp salt

Preheat over to 350°F.

Melt 1 cup chocolate chips in microwave for one minute. Stir. Microwave for another 30-60 seconds. Cool slightly.

Using electric mixer, beat the egg whites until they form soft peaks.

Gradually beat in 1 cup of sugar. Continue beating until mixture resembles meringue-cream texture.

Whisk 1 cup sugar, cocoa, cornstarch, and salt in medium bowl. Put the mixture on a low speed, beat dry ingredients into meringue. Stir in lukewarm chocolate and 1/2 cup of chocolate chips. Mixture will stiffen into a dough-like substance.

Place 1/2 cup sugar in bowl. Roll rounded 1/2-1 Tbsp dough into a ball and into the sugar, coating thickly. Place on prepared/greased cookie sheet. Repeat with remaining dough – space 2 inches apart.

Bake approximately 10 minutes, when the cookies’ surface cracks. Allow to cool before storing.

Drink with milk. Amazing.
